Of course, we’ll need snacks and drinks to serve. Today, I’m creating a spring drink menu full of cocktails that sound light, refreshing, and easy to make in bulk.

My first item is a pitcher of retro Peach Bellinis made with fresh peach purée, peach schnapps, and sparkling wine served in a clear glass pitcher and garnished with fresh raspberries. Not only is it delicious, it adds great color to the table.

There are many variations available for this cocktail. You could add raspberries to the purée and use rosé wine. You could add a touch of lemon juice, start with peach nectar, or leave out the schnapps. If you have kids coming to your Spring Fling, Peach Bellinis can be made virgin by skipping the peach schnapps and using sparkling water.

My next item is mango margaritas. These contain purée made with mango rather than peach. Add to that, tequila, lime juice, Cointreau, and agave nectar plus salt to rim the glass. Precise proportions will depend on how many you want to serve.

For a counterpoint to fruity cocktails, unsweet tea with Four Roses Bourbon served over nugget ice is easier than easy, readily scalable, and quite tasty. You can fancy it up with strawberries, mint, and various other alcohol or use sweet tea if that better suits your taste. Bourbon Iced Tea is delicious in all variations.

A less common cocktail, the Maria Sin Sangre, makes the list. It offers muddled tomato and basil in simply syrup mixed with tequila, dry sherry, lemon juice, salt and pepper. It’s lighter than a Bloody Mary and perfect for spring.

An unexpectedly delightful mixture is Hpnotiq and champagne. Its light blue color is as gorgeous as the drink is refreshing.

If you have the proper serving cups, Moscow Mules can be a great spring drink menu item. Make them in a pitcher by combining vodka, lime juice, ice, and ginger beer.

For a seventh menu item, I’m trying to decide between a Sancerre Wine Spritzer, Sangria, or a pitcher of Hendricks Gin & Soda served over ice with lots of floating cucumber slices. Any of them could work.

I’m not going to hand guests a drink menu. Having one prepared saves me time later and makes throwing a porch party together less daunting. For any occasion, I’ll choose one or two cocktails from my list that pair well with the food I’m offering.

Speaking of food, next up I’ll create a similar list of go-to snacks. Then all I need to do is drag the plants to the porch. Clean off the dust. And send a few texts.
