Why Did Your Grandma Make Chicken Soup?

Why did your grandma make chicken soup? Well, she may not have. She may have bought it in a can, but I bet she served you some when you felt under the weather. It’s what grandmas do. Even moms do it. And the good news is, chicken soup really does help you recover from a cold.

Of course, these days grandma may make chicken soup when the grandkids come for a visit because she knows she’ll be needing some. Kids are collectors of viruses that they’re happy to share.

I think DJ recently fed me a poison peach. He had a bite on his fork. He held it out. I leaned in close to say, “Nummy nummy num” and pretend to eat it. With perfect timing as I pursed my lips, he shoved the bite in my mouth. Stupid kid germs! Now I have a really bad cold. I need chicken soup!

So what makes chicken soup good for you when you have a cold?

First, it contains the protein building block carnosine. Carnosine is produced naturally by the body and is important for proper function of the heart, brain, liver, and kidneys. Giving your body an extra boost of this dipeptide molecule may help reduce some stress on the body while it’s fighting a virus. Both homemade soup and store-bought soup contain carnosine.

Some research indicates that chicken soup may slow the gathering of white cells in the lungs in response to a virus. This may help reduce the coughing, sneezing, and stuffy nose symptoms that make a cold so miserable.

Homemade chicken soup can be nutrient rich from the chicken and vegetables you choose to include. Carrots add beta-carotene. Celery adds vitamin C. Onions add antioxidants. Button mushrooms add B vitamins, riboflavin, and niacin. Chicken adds protein. These nutrients support your immune system and give your cells fuel to rebuild.

Chicken soup is often fairly salty. The salt helps carry bacteria away from the mouth, throat, and tonsils much like a saltwater gargle.

Get plenty of fluids is the most common advice given to anyone recovering from a cold. If you have a fever, fluids are especially important to prevent dehydration. They also help flush the body. Consuming chicken soup automatically adds fluids to your daily intake.

The warmth of chicken soup soothes a sore throat. The steam helps cleanse the sinuses. The added touch of grandma’s soothing tones when she serves you warms your soul. Or so they say.

Chicken soup may have been a comforting, loving tradition long before we could scientifically prove it had healing properties. That didn’t make it any less effective. Somehow, we know that comforting, loving traditions have mysterious healing properties.

Summer is For Ice Cream

There’s no doubt about it, summer is for ice cream! It’s barely summer and we’ve already had heat warnings because it feels 108º outside. To me this means it is important to stay cool. That means lots of icy beverages and a steady diet of cold food.

I love ice cold honeydew, watermelon, steamed asparagus, and gazpacho, but there are days when I think I could eat nothing but ice cream all summer. Of course ice cream comes in many forms with vastly different quality, taste, and calorie counts. My favorite flavors always seem to have the most fat and calories so I’ve been looking for ways to enjoy the cold, but cut the fat and calories.

For instance, I like Häagen-Dazs® Chocolate Chocolate Chip Ice Cream. One half cup serving has 300 calories, 19g of fat and 22g of sugar. I also like Talenti® Sea Salt Caramel Gelato. It’s a better calorie choice with 11g of fat and 240 calories per half cup serving, but it contains even more sugar – a whopping 36 grams.

This is a common problem in American convenience foods. Fat is often replaced with additional sugar. While weight loss diets may measure the desirability of a food based on calories, fewer calories doesn’t necessarily mean healthier. The lower fat gelato also contains gum and natural flavors which I prefer to avoid.

Does this mean there are no good choices other than making my own sorbet or freezing a banana? I hate frozen bananas and I don’t want to make sorbet. I just want to grab something cold that’s waiting for me in the freezer when I happen to be hot and hungry.

I’m in luck! I have frozen yogurt bars in my freezer. They’re not perfect. They contain gum and natural flavors, but they’re only 90 calories with 2 grams of fat, 11 grams of sugar and active probiotic cultures.

There are many brands of frozen yogurt bars. My current favorite is Blueberry Outshine® Simply Yogurt Bars. Yasso® offers a similar blueberry bar with no fat content, 80 calories and 13 grams of sugar. There are additional gluten-free flavors available in the Outshine and Yasso brands, and a variety made by Stonyfield, Yoplait® and Häagen-Dazs®.

And I’m sure there are more depending on where you buy your groceries. You can choose your best match by reading the ingredient and nutrition profile then sampling the product. Hmmm, sounds a lot like dating these days, but I digress.

I suppose there are other options, but since the obsolescence of Banana Fudgecicles, I really prefer ice cream as my summer staple. On the other hand, I hate feeling guilty about consuming all those calories. I’m thrilled that Greek yogurt bars limit my portion size, provide probiotics, reduce calories, fat, and sugar, and still have the soft satisfying feel of ice cream. It’s my 2016 summer bonus!

It’s a Good Day for Chicken Soup!

It’s a good day for chicken soup! It’s raining outside and I have a cold…or something. I don’t feel horrible, but I don’t feel good. At first my sinuses hurt, then my throat got scratchy, and now I’m getting a cough, but certainly not the worst I’ve ever had. I really just want to go to sleep.

Sometimes it’s really hard to know when to give in, go to bed and rest, and when to push on. I was able to work out this morning. That didn’t seem to increase my cough or leave me feeling drained. I knocked out some work and went to the post office. It was when I got back that I began to feel draggy and my cough increased.

I’ve been chugging orange juice and it seems like the perfect time to add some chicken soup! Of course I don’t really feel like a lengthy cooking session.

Luckily, I keep organic chicken stock and rice in the pantry and I always have baby carrots in the fridge. Today, I also have celery. It may not look quite the same as my favorite recipe, but I can have some warm, tasty soup ready in a matter of minutes.

Here’s my simple soup making plan:
32 oz box Imagine Low Sodium Free Range Chicken Broth
3/4 cup water
3/4 tsp salt
3/4 tsp garlic powder
1/4 tsp Italian Herbs paste
Pinch of black pepper
12 – 15 baby carrots, sliced into thin rounds
3 stalks celery, finely chopped
2/3 cup quick-cooking Texmati rice

Pour chicken broth and water into a large saucepan. Add salt, garlic powder, herb paste, and pepper, then stir. Bring to a boil. Add carrots, celery, and rice to broth and stir. Cover and turn heat to low. Allow to simmer for 15 minutes. Serve hot.

If I had a leftover chicken breast or a roasted chicken from the grocery store, I’d tear it into small pieces and add it to the broth along with the rice. This isn’t the first time I’ve fixed chicken soup in a pinch. Sometimes I add a little turmeric or substitute curry powder for the Italian spices. Sometimes I throw in fresh rosemary and sage in place of the herb paste or top things off with arugula or green peas. Of course there are a million options. Since I’m feeling under the weather, the point is to use what’s handy and keep it simple.

I’m planning to pair the soup with a piece of homemade gluten-free bread from the freezer and a cup of hot herbal tea…followed by a nap.

I should be back to normal in no time. I won’t be reaching for the meds unless some complication develops. After all, this is Get Smart About Antibiotics Week – when the CDC reminds us that we overuse and misuse antibiotics which, by the way, are not helpful for colds and flu in the first place.
